The ReservationFinder Restaurant Difficulty Index ranks the hardest-to-book restaurants in the United States by measuring available reservation slots per week over a rolling 30-day period. As of February 13, 2026, The Harbor House Inn in San Francisco and Evelyn in Dallas are among the most difficult restaurants to book, each averaging just 0.2 and 0.2 available slots per week respectively. Lower slots per week indicates higher booking difficulty. Data is collected by monitoring Resy, OpenTable, Tock, and SevenRooms every 5 minutes, 24/7.

Peak Detection Times

When cancellations and new slots are most frequently detected (Eastern Time)

QuietModerateBusyPeak

ReservationFinder's data shows 3 PM ET is the peak time for cancellation and new slot detection, with 116 detections over the last 30 days. Secondary peaks occur at 10 AM ET (89 detections) and 1 PM ET (77 detections). This suggests that diners are most likely to cancel reservations in the early-to-mid afternoon, creating the best window for finding last-minute tables.

How We Collect This Data

ReservationFinder continuously monitors four major reservation platforms — Resy, OpenTable, Tock, and SevenRooms — checking for newly available tables every 30 seconds for followed restaurants and every 5 minutes for all others.

When a cancellation or new slot appears, our system detects it within seconds and records the restaurant, date, time, party size, and the exact moment of detection. This data powers both our alert service and the statistics on this page.

The difficulty index is calculated by counting available slots per restaurant over the last 30 days and dividing by weeks. Restaurants with fewer available slots per week are considered harder to book. Only restaurants with at least 7 days of monitoring history are included.
