When same-day tables appear.

Every same-day New York table we saw, by the hour it first appeared (Eastern). The 3 PM spike is about half Don Angie, which adds tables then.

Peaks: 3 PM (320 tables), 10 AM (272), noon (216). Another 104 appeared overnight.

§ 03 · Why they reopen

Cancellation deadlines.

Many of these restaurants charge for late cancellations, so people who change plans tend to cancel before the deadline, and some of those tables go back on sale. Some restaurants also release held tables on a schedule.
