How "verified" works

For each restaurant on this page, we run a polling burst around the suspected release moment and look for the boundary date (today + the booking window) flipping into the bookable calendar with fresh inventory. The catch count next to each entry is the number of distinct release days we caught the flip on.

Verified = caught on 2+ separate days with a consistent release time and sub-30-second detection lag. Confirmed (single observation) = observed once, directionally correct but not statistically locked in.

How do you verify these release times?

We monitor each restaurant's reservation API in 5-second bursts around the suspected release time. When the burst captures fresh slots inside the boundary date, that's a confirmed release. The catch count and detection lag shown next to each entry is the actual evidence — it's the number of distinct release days we've personally observed it fire on.

Why is my favorite restaurant not on this list?

We only publish times we've directly observed multiple times. If a restaurant uses a non-standard schedule, has very small inventory that vanishes before our poller can catch slots (this is true for I Sodi, 4 Charles Prime Rib, and Jeju Noodle Bar), or wasn't on our monitoring list during a release window, we leave it off. We add new ones as evidence accumulates.

What's the difference between "Verified" and "Confirmed via single observation"?

"Verified" means we caught the release fire on at least 2 separate days, with a sub-30-second detection lag and a consistent release time and booking window across every catch. "Confirmed via single observation" means we observed one release fire — directional evidence, but not statistically locked in. Use the verified bucket to plan; use the confirmed bucket as a starting point.

Do release times ever change?

Occasionally — restaurants do adjust their drop times, especially during holidays or when ownership changes. Our monitoring runs continuously, so if a time shifts, our evidence will reflect it within 1-2 release cycles and this page will update automatically (it pulls live from the same monitoring data).

Why are most popular restaurants NOT at midnight?

Midnight was the standard 5+ years ago, but most operators have moved to morning windows (9 AM - noon ET) so their hospitality teams aren't fielding reservation drama at 12:01 AM. The 'midnight ET' advice is still on most restaurant guides because it gets copy-pasted around — but our continuous monitoring shows the majority of popular spots fire between 9 AM and noon ET.
